Made with fruits, vinegar, spices, kelp and salt it adds a distinctive flavour to marinades, vegetable dishes, sauces, and used to flavour fish and meat dishes. It is commonly drizzled over dishes including okonomiyaki, crumbed and fried meat (katsu) or takoyaki.
